1. Finely chop the red onion and herbs.
2. Fold into the yogurt and season with salt, pepper, and a pinch of Piment d’Espelette.
3. Heat a splash of oil in a pan and toast the mustard seeds and curry leaves until crispy.
4. Then place them on a piece of paper towel.
5. Spread a generous dollop of yogurt between two slices of Artisan bread and add a good spoonful of clarified butter to the pan.
6. Fry the sandwich until crispy and serve with the crispy curry leaves and mustard seeds.
