Ingredienser

Spiced Field Peas

  • 2 dl (180 g) dried Danish Grey Peas
  • 2 cloves garlic
  • 1 red onion
  • ½ dl cold-pressed virgin olive oil
  • 2 tsp. cumin
  • 3 tsp. paprika
  • 1 tbsp. tomato paste
  • 2 tsp. pepper
  • 2 tsp. salt
  • 1 tbsp. butter
  • 2 dl cooking water from the field peas

Vegetables

  • 1 cucumber
  • ½ red cabbage or crisp lettuce
  • ½ red onion
  • 150 g cherry tomatoes
  • Small handful fresh chopped parsley

Dressing

  • Chili dressing or crème fraîche dressing

Fremgangsmåde

Spiced Field Peas

1. Rinse the dried grey peas and soak them in plenty of water in the refrigerator for at least 12 hours.

2. Drain the peas and boil them for 30-35 minutes in lightly salted water.

3. Drain the cooking water from the boiled grey peas and save it (to be used later in the recipe).

4. Finely chop the garlic and onion.

5. Add olive oil to a pot and sauté the onion and garlic for 3 minutes.

6. Add cumin, paprika, tomato paste, pepper, salt, and butter, and stir well.

7. Add the cooked peas and let everything sauté for 5 minutes.

8. Add 2 dl of the reserved cooking water to the pot and boil until almost all the liquid has evaporated.

Tip: The pea filling can be enjoyed both hot and cold in pita bread.

Serving Suggestion

1. Rinse the lettuce and vegetables, and cut them into wedges or slices.

2. Warm the pita breads in the oven or a toaster.

3. Fill your pita breads with warm spiced peas, vegetables, and your favorite dressing.
