
Foodpeople became a reality in 2016, when owner and CEO Susanne Boye Nielsen and the founder of Il Fornaio acquired the distinguished Trianon bakery, originally established in 1940 by master baker Jørgen Anton Ludvig Vinther.


Bakery collective
Foodpeople was established as a bakery collective consisting of Il Fornaio, Jalm&B, and Trianon. Foodpeople is primarily built on the foundation and uncompromising approach to craftsmanship and raw ingredients from Il Fornaio.
Jalm&B became a reality in connection with the merger of the company, and the brand draws on the best of both worlds - with a contemporary Copenhagen twist and strong creative drive.

The story includes many milestones. Il Fornaio was established in 1988 by Elvio Milleri and Edelvita Santos Milleri.
Founders Elvio, Edelvita, and Alessandro were never able to find good Italian bread that they felt could be served in their Michelin restaurant, Era Ora. It therefore became easier to bring a baker’s apprentice up from their hometown in Perugia. After a few weeks, they called for another one, and then another. This is how Il Fornaio came into being in 1988.
Today, more than 30 years later, our many bakers work year-round at the wood-fired oven in Denmark’s first, and to date only, 100% Italian organic stone oven bakery.
