Ingredienser

• 4 slices of Jalm&b pain de Mie sandwich bread.

• 3–4 organic eggs

• 2–3 tbsp. mayonnaise (Japanese mayo: Kewpie is recommended – it's creamier and sweeter)

• 1–2 tsp. milk or whipping cream.

• Butter

Fremgangsmåde

Eggs

1. Boil the eggs for 10 minutes until hard-boiled

2. Immediately cool them in ice water for easier peeling.

3. Peel the eggs

4. Mash the eggs in a bowl with a fork

Tip: For an extra fine texture, mash the yolks separately with mayonnaise and milk before folding in the chopped whites.

5. Add mayonnaise and optionally a little milk or cream

6. Stir it together into a uniform, creamy mixture.

7. Season with sugar, salt and pepper.

Assembly

1. Cut the crusts off the bread slices.

2. Spread each slice with a thin layer of butter (this prevents the bread from getting soggy from the filling).

3. Spread a thick layer of egg salad on one of the bread slices and close with the other.

Tip: Gently press the sandwiches together and optionally let them rest for 5 minutes before cutting them in half or diagonally.

Tip: For a luxury version, you can place a whole, perfectly soft-boiled egg in the center of the sandwich before assembling it, so it's clearly visible when cut.
