Ingredienser

  • 8 slices Pain de mie
  • 600 g chicken thighs, boneless and skinless
  • 2 eggs
  • 50g wheat flour
  • 75g panko breadcrumbs
  • Oil for frying
  • salt and freshly ground pepper

Cabbage

  • 200g white cabbage
  • 1 tsp rice vinegar or apple cider vinegar
  • 1 tsp salt
  • salt

Mayochili

  • 150g mayonnaise
  • 1-2 tbsp sweet chili sauce
  • 1 tsp soy sauce (optional)

Fremgangsmåde

Cabbage

1. Toss the cabbage with vinegar, sugar, and salt

2. Let it marinate for 10-15 minutes

Mayochili

1. Stir mayonnaise with sweet chili sauce and soy sauce

2. Taste and adjust until the balance is creamy, slightly sweet, and spicy

Chicken

1. Pat the chicken dry and season with salt and pepper

2. Whisk eggs in a deep plate

3. First coat the chicken in flour, then in whisked egg, and finally in panko

4. Fry until crispy and golden in oil over medium heat, about 4-5 minutes on each side.

5. Let the crispy chicken cool on paper towels before slicing

Assembly

1. Lightly toast the pain de mie bread until golden but still soft

2. Spread mayochili on both slices of bread

3. Arrange the cabbage and crispy chicken

4. Close the sandwiches and slice
