Fremgangsmåde
1. Snap off the woody ends of the asparagus and cut into smaller pieces.
2. Place in a bowl with olive oil, lemon zest and juice, salt, and pepper, and let marinate for at least 30 minutes.
tip: Make the mayo while it marinates.
1. Use an immersion blender to blend neutral oil with herbs until the oil is completely green.
2. Whisk the egg yolk with vinegar and a little salt and pepper.
3. Whisk in the green oil, a little at a time, until it emulsifies into a mayonnaise.
tip: you can also use an immersion blender to mix everything.
1. Toast the burger bun on the cut side in a pan with plenty of butter.
2. Spread the bun with mayo, add asparagus in the middle, and finish with plenty of fresh cress.
tip: Serve with fries and herb mayo!
