1. Mix the mayonnaise and chili paste together, and set the mixture aside.
2. Slice the burger buns in half and toast the cut sides in butter. Set them aside.
3. Sauté the spinach leaves over high heat in the same pan until just cooked. Set aside.
4. Whisk the eggs
5. Cook them patiently over low to medium heat.
6. When the omelet has almost set, top it with cheddar cheese and fold one side over.
7. Divide the omelet in half.
1. Spread the chili mayonnaise on the bottom and top buns,
2. Place the omelet on the bottom bun
3. Top with spinach and finally the top bun
