Ingredienser

  • 1 pack Jalm&B brioche hot dog buns (4 pcs)

Pickles

  • 100 g cauliflower
  • 100 g carrots
  • 100 g gherkins
  • 50 g red onion
  • 0.3 kg sugar
  • 0.3 dl vinegar
  • 0.3 dl water
  • 10 pcs. peppercorns
  • 1 pc. bay leaf
  • 1 pc. star anise

Parsley Mayonnaise

  • 1 bunch flat-leaf parsley
  • ½ L grapeseed oil
  • 1 pc. egg yolk
  • 1 tsp. Dijon mustard
  • 1 tsp. white wine vinegar
  • Salt and pepper

Fried onions

  • 2 yellow onions
  • 4 tbsp. flour
  • 4 dl grapeseed oil
  • Salt and pepper

Fremgangsmåde

Pickle

1. Cut cauliflower into small florets

2. Slice carrots and gherkins

3. Cut onions into small wedges.

4. Bring sugar, vinegar, water, and spices to a boil in a saucepan.

5. Pour the hot pickling liquid over your vegetables and let it steep for at least 1 day.

Parsley Mayonnaise

1. Remove the stems from the parsley.

2. Blend the parsley leaves and oil at full speed for up to 10 minutes.

3. Strain out the parsley.

tip: If the oil has warmed up, let it cool down.

4. Next, whisk together egg yolk, salt, pepper, mustard, and white wine vinegar.

5. Gradually add the green oil until the mixture is thick.

6. Fold the pickled vegetables into the parsley mayonnaise and season to taste.

Crispy Onions

1. Slice the onions thinly.

tip: use a mandoline

2. Toss the onion rings in flour.

3. Heat the oil to 75-85 degrees and fry the onions.

4. Remove the onions when they are golden.

Assembly

5. Warm your Jalm&B brioche hot dog buns for 3-5 minutes.

6. Assemble your 'kradsere' (see pictures)
