Ingredienser

• 4-6 thick slices of Jalm&b Potato Buttermilk Toast Bread

• 2 large eggs

• 1.5 dl milk

• 1 tsp vanilla sugar or vanilla extract

• 1 tsp ground cinnamon

• A pinch of salt

• 2-3 tbsp good olive oil (gives a crispy edge and subtle flavor).

• Butter

• 125 g mascarpone.

• 1 tbsp honey or powdered sugar.

• A little grated lemon zest.

Fremgangsmåde

Cream

1. Stir mascarpone, honey/powdered sugar, and a little grated lemon zest into a smooth cream.

Toast

1. Whisk eggs, milk, vanilla, cinnamon, and salt together in a shallow bowl.

2. Cut the toast bread into thick slices

3. Place the bread slices in the egg mixture and let them soak for about 30 seconds on each side until they are well saturated (without falling apart)

4. Fry in olive oil in a pan over medium heat.

5. Fry the bread slices for 3-4 minutes on each side until golden and crispy. Add butter during the last minute of frying.

Plating

Serve the warm French Toast with a generous dollop of mascarpone cream on top and drizzle with olive oil

tip: can also top with maple syrup or a good honey
