Circular Economy with Genbrød

Genbrød is a sustainable Jalm&B sourdough bread made with upcycled golden-roasted hazelnuts, which were a surplus from Jacobsen's production of the beer 'Vinterbryg – A Nutty Ale'. Genbrød is a Jalm&B initiative to reduce food waste, where by-products from other food production are incorporated into recipes and product development.

Genbrød is leavened with organic rye sourdough and pre-ferment for 24 hours. The brew-fermented hazelnuts are then roasted and folded into the bread dough. The bread is baked with organic whole grain spelt, which complements the flavor of the added roasted hazelnuts from Jacobsen's ale brew. The bread is baked in Jalm&B's stone oven for flavor, a crispy crust, and a moist crumb. The result is a delicious sourdough bread, where the fermented and roasted hazelnuts impart notes of the beer and a fine acidity from the sourdough and roasted malt – the best of two proud crafts.

Golden-roasted surplus

By reusing ingredients that would otherwise have gone to waste, Jalm&B and Jacobsen focus on an everyday full of opportunities rather than limitations. Avoiding food waste is not just about limiting errors and overproduction. It's also about seeing possibilities. Skilled and innovative craftsmanship utilizes the potential in by-products and surplus ingredients that would otherwise end up as waste or animal feed.

Circular Gastronomy

The collaboration with Jacobsen began with the opposite premise – when the brew BREAD&BEER for Copenhagen Cooking & Food Festival 2018 was created. Here, the skilled brewmasters at Jacobsen brewed an organic Saison-type beer using leftover bread from Jalm&B's product development of the Artisan Bread. A fascinating collaboration came to light, where competent brewmasters, bakers, and chefs inspired each other across disciplines. A collaboration that to date has resulted in, among other things, an interesting and extremely delicious beer, a sourdough bread made with the spent grain from the BREAD&BEER brew – and most recently, Jalm&B Genbrød, which reuses brew-fermented hazelnuts. A collaboration founded on professional enthusiasm and inspiration, creating delicious and uncompromising products, and making sense commercially as well as in terms of sustainability.
