Jalm&B is our Danish organic craft bakery with a product range from flaky croissants and sweet danish pastry to 24h fermented sourdough bread all made with organic Nordic ingredients. Based in Copenhagen, physically as well as mentally, we work with local farmers and like-minded producers. Appreciating the unique ingredients are only part of the equation. Respecting the craft and the optimal fermentation of the sourdough requires patience and time. That is why time is our main ingredient in every recipe.
The name Jalm&B is an acronym of the names of Trianon’s founders and descendants, Jørgen, Anton, Ludvig, Max & Bøje and at the same time a tribute to the history and craftsmanship that Jalm&B is builds on. Trianon was originally established in 1941 outside Copenhagen and represents a long and proud history within baking in Denmark. When Foodpeople became a reality, it was decided to establish Jalm&B out of the craft heritage strongly present in Trianon mixed with the Il Fornaio chefs mentality and commitment for a no- compromise approach to baking.
