NEW: Thaw and serve sandwiches
Sandwiches thawn and prepared in store – directly from the freezer – served warm or enjoyed cold from the fridge is a significant part of the sandwich category. Historically most Il Fornaio sandwiches have required heating before serving. Consequently in order to meet the serving requirements and reality of convenience and take-away, our bakers have been working on new recipes and processes – where we get the most out of our Italian flour, sourdough and fermentation process.
The secret lies in the long fermentation process, where as much water as possible binds to the flour. Water is flavour-enhancing for grains and flour and the high amount of water also ensures texture and a juicy crumb.

We care for and feed our sourdough every day. The sourdoughs are extremely stable living cultures consisting of flour and water and all the naturally occurring good bacteria and enzymes. All sandwiches are clean label – ie. they are organic and completely free of additives. In addition, our sandwich is naturally 100% vegan and lactose free.
