Stop food waste

  • 500 g mixed tomatoes
  • 1 small red onion
  • 4 anchovies
  • 1 clove of garlic
  • 4 tbsp Il Fornaio extra virgin olive oil
  • 2 tbsp lemon juice
  • 100 g goat cheese
  • 1 handful of mint
  • 1 day-old bread

Use your day-old bread in a delicious salad like this panzanella full of flavour and colours.

Cut the bread into coarse pieces. Cut the tomatoes into coarse slices and cut red onions into thin slices. Chop the anchovies and mash the garlic with the side of a large knife. Put it all in a large salad bowl and drizzle with olive oil and lemon juice. Season with salt and pepper and let it soak for 10-15 min. Then crumble the goat cheese and bring in the toasted mint. Toss everything together and serve with an extra sprinkle of oil and a bit of pepper.
